Weeknight Bolognaise

I’m having a Barefoot Contessa spell of cooking at the moment, and delicious it has been too!

This one is Ina’s weeknight Bolognaise from Barefoot Contessa How Easy Is That? It’s a great recipe, a quick ragu that tastes much longer simmered than it actually is (clever). I popped in some olives, because they needed using up, but really the recipe is perfect as is, no additions necessary. I used Malbec for the wine, which we though was a good choice here, it wasn’t overpowering, but gave  a good winey flavour.  Ina’s choice of orecchiette was perfect, it cradled the sauce just right.
